I found myself with a freezer slowly filling up from bananas that were too ripe to enjoy and therefore put aside to be used in other tasty ways. Here is one way I found to repurpose them. The slight tang of the raspberries is a great balance to the soft sweetness of the bananas and adds an extra dimension to a fairly basic banana bread recipe.

Ingredients
- 4 bananas, very ripe and mashed
- 2 large eggs
- 2 cups all-purpose flour
- 1 cup halved raspberries, fresh or frozen
- 3/4 cup brown sugar
- 3/4 cup dark chocolate chips
- 1/2 cup butter, room temperature
- 1/3 cup plain yogurt
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 salt
Directions
- Preheat oven to 350'F
- Grease or line 2 muffin tins (will yield 18 muffins)
- In a large bowl cream together butter and sugar, about 3 minutes with a hand blender
- Add eggs one at a time, blending in between each addition
- Then mix in yogurt, vanilla, and mashed bananas
- In another bowl mix together flour, baking soda, cinnamon and salt
- Add dry ingredients to wet ingredients in 3 additions, mixing in between each
- Once all ingredients are blended well, fold in the raspberries and chocolate chips until evenly distributed. Be careful not to over mix
- Pour batter into muffin tins and bake for 30 minutes
- Test batter with a toothpick, if cooked, tooth pick will come out clean and dry
- Allow to cool on a wire rack before serving
Notes
- I don't always have plain yogurt available, however I always have vanilla yogurt on hand and found it works great in this recipe. If you are adding a flavoured yogurt you may want to reduce the sugar slightly and omit the vanilla extract as flavoured yogurts will already have a sweetener in them.
- I used frozen raspberries and let them thaw for 10 minutes on a paper towel. Also I made sure to only fold the batter as much as I needed to mix them in so that they wouldn't turn the whole muffin pink.
